A PIZZA in Wellington has been listed as sixth best in the UK - and it’s vegan.

The National Pizza Awards took place at the beginning on the month and saw Wellington put on the map when a pub became one of the finalists.

The Dolphin was shortlisted for its Liber pizza, a vegan option featuring vegan green pesto, caper berries, vegetarian sausage, and fresh and sun-dried tomatoes.

Anna Gorman, who has been a chef for 20 years but only recently turned her focus towards pizza, said it was a “massive achievement”.

She said: “Although I cook meat for customers my partner and I are vegetarians and two of my children have dairy intolerance. This has meant I have had to adapt many recipes and come up with new ones, sometimes through trial and error and sometimes through investigating recipes and vegan substitutes that I had not come across in more traditional cooking.

“I had a Bristol pub for 15 years and The Dolphin in Wellington for five, and we have always catered for vegans and vegetarians.

“They have just as much right to go out and enjoy a really good meal as carnivores. Sadly, there is a historic lack of empathy and interest within the culinary world.

“My partner and I roll our eyes and groan when the vegetarian choice is vegetable lasagne or mushroom risotto, the go-to dishes of establishments that either don’t understand or care about vegan or vegetarian diets.”

She said by entering a vegan option she hoped to bring people’s attention to the possibilities that are available to customers with dietary requirements.

The London awards saw 16 finalists battle it out for the top spot.
