A Somerset sausage supremo has been crowned this year’s 'Champion of Champions' fore his brilliant bangers.

Chris Potter from Tim Potter Son & Daughter was crowned this year's top dog with his unique sausage flavours taking the crown prize at the anual event organised by the Meat Trade Journal.

The competition was open to any producer who won the overall title at a recognised sausage competition between July 1 2014 and June 30, 2015.

Each entry was then judged by a team of experts where the overall winner was decided.

Potter, who won with a pork, turkey, and cranberry sausage, said he was “speechless” at learning he had won.

“I’m absolutely over the moon,” he told Meat Trades Journal. “This is a dream for me because I absolutely love entering competitions. I’ve won things with sausages before, but never anything to this extent, so I can’t really explain just how happy I am.”

He added that he thought it was his innovative flavours that saw him take away the top prize: “You don’t see a lot of sausages with turkey in them.”

Meat Trades Journal advisor Fred A’Court was one of four judges alongside Keith Fisher from AHDB Pork, Steve Derrick of Lucas Ingredients, and butcher Keith Boxley.

A’Court explained that, when judging, they looked for a high level of consistency at every level. This included consistencies in size, a consistent sausage mix with an even distribution of ingredients, and consistent and even cooking.

Entrants were required to send two packs of the same sausage in, one cooked and one raw. The two were then compared for differentiations.

“One of the things the contestant should be wary of is not undercooking the sausage in a bid to not make it burn,” he said. “We’re looking for a nice golden brown colour. Obviously the taste is very important. If you can get a taste that’s distinctive and a bit different, then so much the better.”

He added that the team of experienced judges did not want to see any air pockets or separation of the skin, and they expected the products to have tidy ends.

After admitting that a traditional pork sausage often tended to be successful in this competition, A’Court confessed to being pleased that a unique sausage was this year’s victor.

“I’m delighted that a pork, turkey and cranberry sausage has won this year, because it’s just that little bit different, and it’s perfect timing for this competition as it’s coming up to Christmas. The butcher who won with that sausage will do extremely well. If he markets his win successfully, he will quadruple his sales of sausages this year.”
